This week I went to the Florida Restaurant & Lodging Show in Orlando. For me, going to this show was a great reminder of all the individual personalities behind all of the many great and varied restaurants throughout the country.

It was great to meet and chat with many wonderful people with so many different stories. People of all types with different personalities and different backgrounds share the same common values with the goal of putting a smile on somebody's face when they are served a great and memorable meal!

This is one of the hardest working groups of individuals on our planet; one that we take for granted sometimes. They are passionate about what they do, and bring their teams together, day in and day out, to deliver great customer service and memorable food.

We all know that there are so many things that can go awry in a day [I heard many stories!] and often do. These teams just work through it and make it happen!

Thanks to all of you for all your hard work, passion and strength. It makes me proud and thankful to be a part of this industry. Please thank your service team today. And send your comments back to the Chef - they do appreciate it!
